Breakfast Bircher

This has to be my all time favourite breakfast. It’s my mother’s day request when the kids ask what I want most. Lots of fibre and good fats as well as micronutrients selenium, zinc, magnesium and B group vitamins full of antioxidants and anti-inflammatories. Prepare it the night before and its ready to go for a quick breakfast amidst the morning rush.

Ready in 10mins + overnight soak

Ingredients

Bircher Muesli

  • 30g almonds

  • 30g walnuts

  • 1 cup rolled oats

  • 2 tbsp chia seeds

  • 1/2 tsp cinnamon

  • 1 orange (juiced)

  • 1 cup Natural Greek yoghurt

  • 1 cup milk (or water)

Topping

  • 1 green apple grated (skin on)

  • 125g blueberries

  • 1 tbsp sunflower seeds

  • 2 tbsp pepita seeds

  • Yoghurt to serve

Like many of my recipes they change depending on what I have in the cupboard. Don’t be afraid to experiment with different seeds, nuts and fruit, keeping the quantities similar. Bircher muesli will keep in the fridge for a few days, so take out a serve each day to top with seeds and fruit.

Step by Step Instructions

Step 1

Roughly chop the almonds and walnuts into chunky pieces.

Step 2

Mix the chopped nuts, oats, chia seeds, cinnamon, orange juice, yoghurt and milk in a bowl. Cover and refrigerate overnight.

Step 3

Serve bircher muesli topped with grated apple, blueberries, seeds and a dollop of yoghurt.
